picked. The mushrooms must be cleaned and cut into halves before they
are dried. Once they have been cut in half, they are dried naturally
using high tech climate controlled machines. The reason they must be
dried in such a manner is because if they are dried too quickly, the
mushrooms will actually cook rather than dry. Also, the process must be
done over time to ensure that they are not only completely dry but also
so that the mushrooms are not “shocked”.
The color of the agaricus can usually show how the mushroom was dried.
The ABM should be a nice golden color with few dark brown spots. ABM,
which has many dark black spots, is usually sold to pharmaceutical
companies to be further processed into extracts, powders.
